Good for you chocolate mousse?
Too good to be true? Nope. And it’s yummy, too.
12 oz silken tofu
1/8 tsp almond extract
2 tsp vanilla extract
1 c dark or semisweet chocolate chips (darker = healthier!)
1/2 c fat free Greek yogurt, plain (or vanilla, for a sweeter mousse)
Drain tofu and place in a blender with the almond and vanilla extracts. Blend until smooth.
Melt the chocolate chips–you can do this in a microwave by zapping for 20 seconds, stirring, then repeating this process until they are melted.
Add the melted chocolate chips to the blender and blend until mixed.
Remove from blender and fold in yogurt until just mixed.
Refrigerate before serving.
Add sliced strawberries and/or shaved chocolate for a garnish.
