5 Minute Coconut Date Bars are pretty much the simplest chocolate cookie known to mankind. What’s more, they’re HEALTHY, yummy, and paleo-friendly.
They take all of five minutes to prepare, although you do have to wait about an hour before serving, to allow time for them to chill. We love them.
This recipe is easiest with a food processor.
1 c dates
1 c any kind of nuts or seeds (Mix and match! We like walnuts and sunflower seeds.)
1 c shredded, unsweetened coconut
2 T (or more) cocoa powder
1-2 T coconut oil
pinch of salt
1 t vanilla (optional)
Put dates in a food processor and blend for about 15-30 seconds. Add in the remaining ingredients and blend.
Spread evenly into an 8×8′ pan and press firmly into place.
Refrigerate about one hour before cutting into squares and serving. Makes 16 servings.
